After some time, having sweets, cakes and sinful chocolates, I needed a healthy meal to kick-start my day! It's my first attempt of making a little Mexican food, in my way. I'm not sure if it's how it should be but when we talk about Mexican food, it has got to have something to do with Tortilla. If they had a national food or something, has to be it. Tortilla is a flatbread, made of corn or wheat. I got myself a wholemeal Tortilla and it tasted quite good on it's own, surprisingly. Well, the looks of it have gotten me all wrong..
They come in so many names it confuses me sometimes.
~* Quesadillas - Flour tortilla pan-fried/toasted with melted cheese, then added with meat, vege or any kind of desired fillings, folded in flat.
~* Tacos - Traditionally a corn tortilla with meat, avocado, cheese and any others.
~* Fajitas - The filling are usually grilled or pan-fried meat(chicken, beef, shrimp) serve with sizzling plate, the tortilla sheet, salsa, guacamole, sour cream will serve separately, you have to wrap it by your own.
~* Burritos - Usually Meat, vege, eggs, or beans wrapped in tortilla.
~*Chimichanga - deep fried burrito.

Breakfast Egg Burrito
2 large wholemeal tortilla
3 hard boiled eggs, mashed with a fork
1 tbsp of olive oil (or mayo, if preffered)
1 whole avocado, sliced thinly or mashed
1 cucumber, diced
some cherry tomatoes, diced
salt and pepper to taste
Heat tortilla in a pan. Mash hard boiled eggs, olive oil, avocado, cucumber and cherry tomatoes together in a bowl. Add salt and pepper to taste. Place it in warm tortilla and wrap up to good health!
So it does come in a package.. tasty and healthy.
