It's already Wednesday, when I realized that the submission for the title of my final project was due yesterday. Come to think of it, I'm not really sure what I should do yet. I should go and get some professional advice. I'm not sure why the college has to make my holidays miserable. I mean, there is still weeks to go till next semester and they want us to crack our heads in a week time to think of the project. Till now I get sleepless nights thinking it.. I need a head start. Now get brain cracking.
I made these some time ago for my friends, since most of them missed my Oreo Cheesecake.
If you like brownies, and you like cheesecakes, you certainly should try these.
They're really good brownies. Mum suggest that I bake them again. Well, maybe sometime later. This recipe is definitely a keeper.
Cheesecake Brownies Recipe
for the Brownies :
120g unsalted butter
120g of unsweetened chocolate
200g of sugar (I reduced to 170g)
1tsp of vanilla extract
110g all-purpose flour
1/2 tsp of baking powder
1/4 tsp of salt
50g of walnuts, chopped coarsely
for the cheesecake topping:
250g cream cheese
1tbsp of lemon juice
Line an 8inch square pan with parchment paper or lightly grease the bottom. Melt butter and chocolate over a pot of simmering water. Leave it to cool slightly and add in sugar and vanilla. Add in eggs one at a time. Fold in the rest of the sifted dry ingredients. Mix until batter is combined. Pour batter into prepared pan. For the topping, beat softened cheese with the rest of the ingredients until it forms a smooth batter. Pour on top of the brownies batter. Bake at preheated oven of 190C for 30mins or until a skewer comes out clean. Let it cool slightly before removing it from pan. Cut the brownies into squares as desired.
