Oh well, I've been bugging Mum to make me her Shepherd's pie. So, let's just talk about diets later. She makes the best ones. Yet it was so easy when I helped her out in the kitchen. Mum made it for pot-luck. And did I tell you? I just LOVE mashed potatoes. It's better than french fries and potato chips! Especially when they're baked..
See the juicy filling? I asked Mum to cook with mince chicken breast, then I was the one the blame if it did not taste any better than the original. Surprisingly, it tasted as good as usual. Phew, I guess pot-luck does give me the luck I need. I replaced button mushroom for fresh mushrooms too. Like Jamie Oliver said, "button mushrooms are the worst mushrooms in the world". I'm not sure about the world but button mushrooms are really not for my liking too.Shepherd's Pie Recipe
500g minced meat (chicken, pork, or beef)
2 large white onions, chopped
1 can button mushroom, sliced
250g mixed vegetables
Salt and pepper to taste
1 1/2 tbsp oyster sauce
1tbsp cornflour dissolved in 1/2 cup of water
For the topping :
800g of potatoes
1/4 lb butter
2 tbsp evaporated milk
Salt to taste
1 egg
Method :
Heat oil in a wok. Stir fry onions until it's slightly tender. Add in minced meat and stir fry for a few minutes. Place in salt, pepper and oyster sauce. Stir in mushroom, followed by mixed vegetables. Blend corn flour with water and pour it into the mixture. Cook till the mixture thickens. Dish into oven-proof tray.
For the topping, boil potatoes with the skin until softens. Test it by inserting a fork, if it comes out easily, it's good and ready to go. Place the peeled potatoes in a large mixing bowl and mash. Add in egg while it's still warm. Mix well. Add in the remaining ingredients. Mix till pliable for spreading. Spread the mashed potato over the meat and bake in a preheated oven at 180C till nicely browned for approximately 45mins.
Mum stored the leftovers in the freezer and baked me a large yummy crab for breakfast the next day. Yes, Mr. Crab, breakfast. Stop staring at me already.
As usual, my aunt have decorated the plate with her Egg Rolls. She fried omelettes and wrapped in Mum's homemade fish paste. Threw it in the steamer for a couple minutes or so. And it's done. Simple and nice for any ocassion.You might just want to try them out for the weekend. Have fun!

I guess foodies just cant go on a "diet".. haha..

It is party season here again....Thanksgiving, Xmas, New Year....!! Oh well...you are right, party first, diet later!hahahahaaa
